京都府北部丹後半島の上世屋という村で育てました。
私たちは農薬や化学肥料を使わず、上世屋の自然の力、
集落の人々に受け継がれてきた技を最大限に生かして、
上世屋らしいお米を育てたいと思っています。

このお米は、亀の尾という品種です。
寒冷な土地で育てられてきて、コシヒカリができる以前には上世屋でも作られていました。
背丈は高く、ノギが長いので風にゆれる姿も美しいです。
稲木で太陽と風の力でじっくり干しあげました。
昔ながらのお米のねばりのあるさっぱりした味を楽しんでください。
